CHOCOLATELY CRUNCHY TIFFIN
One of my absolute favourites and one that is lucky to last the day. The combination of textures and flavours is incredibly moreish. With a festive twist for the wintery months this can also make the perfect crowd pleaser at a party or as a thoughtful Christmas gift.
The ingredients are mostly store cupboard essentials (at least in my house!) and a lot can easily be swapped for anything else you might have. For example, swap chestnuts for other soft nuts such as walnuts or pecans. If you don't have cranberries use all raisins. The mixed spice is also optional.
It must be an easy recipe seeing as the method is so short! Enjoy!
RECIPE

200g butter
50g cocoa powder
100g golden syrup or honey
350g biscuits (shortbread or digestive biscuits work really well)
50g dried cranberries
50g raisins
100g chestnuts
1tsp mixed spice
METHOD
Gently melt butter and syrup/honey in a pan. Add cocoa powder on a LOW heat (otherwise it splits) and mix until smooth.
Break up the biscuits roughly in another bowl and mix in dried fruit, chestnuts and spice.
Add chocolate syrup and mix well until everything is covered.
Add to a baking tray lined with baking paper and put in the fridge for 2 hours or overnight.
Slice when solid. Should make 12.
