Now the triathlon season is over and with a bit more time on my hands, it is back in the kitchen! It has been far too long since I did some baking or, as far as this recipe goes, no-bake treats!
All you need is a good blender and some time to roll (good to rope in kids, partners or friends for this - as long as you can trust them not to eat as they go!)
They are also great for this time of year with some festive ginger and spices. So these could be a great heartfelt homemade Christmas gift :)
200g medjool dates (without stones)
50g crystallised stem ginger
50g desiccated coconut
165g whole almonds or ready-ground almonds
30g walnuts or pecans
1 tsp ground ginger
1 tbsp ground cinnamon
1 tsp tumeric
1 tbsp honey
pinch of ground black pepper
pinch of salt
All you need is a blender with a good blade. So to not overwhelm it, start with blending the dates, raisins and stem ginger first until a thick paste forms. Then add all the other ingredients in and blend until it starts to form its own very large ball in the blender. If it is still dry add a bit more honey as it blends until it comes together. If it is too wet then add a bit more desiccated coconut or ground almonds depending on which one you have more of.
Then roll them into just larger than bite-size balls (should be two bites really!) and place them on a non stick sheet or tray. This recipe should make about 20 balls. They should be good to eat right away or you can pop them in the fridge for up to 30 minutes. Then store in an air-tight container in the fridge.
