POLENTA QUICHE

My favourite go-to recipe when I want something super tasty with a big salad which is quick, easy and versatile for what I have in my fridge.


A quiche without the faff and frustration of pastry.



This recipe is a mediterranean theme with juicy vegetables and goats cheese. Another favourite I make is with smoked salmon, broccoli and peas :).



RECIPE:


6 eggs beaten

4 tbsp polenta

zest of one small lemon

juice of one lemon

125ml milk of choice (water can also work if stuck!)

1 small courgette sliced thinly

1 red pepper sliced thinly

1 red onion chopped

1 small clove of garlic minced

200-250g goats cheese in slices or chunks


METHOD


Preheat the oven to 200C fan/220 conventional/gas mark 7.


Firstly prepare all the vegetables and fry them until softened in a large pan. Do in batches if needed to make sure they are cooked evenly. Onions and peppers will take slightly longer than the courgette. Put the garlic in last so it doesn't burn.


Allow them to cool slightly while making the base of the quiche.


In a large bowl add the eggs, polenta, zest, lemon juice and milk and mix well with a whisk.


Take a greased quiche dish (approx 24cm) and arrange 2/3 of the vegetables evenly across the base and half the slices/chunks of the goats cheese. Carefully pour the polenta egg mix over the top. Then arrange the remaining vegetables and cheese across the top.


Bake for 25-35 minutes until slightly risen, golden and no wobble in the middle!


Serve with a delicious colourful salad with lots of fresh herbs and, if you're like me, a large dollop of chutney! :P
